Thanks for much for your feedback, Sophia!! still sounds good though :). My suggestion is to cook the lentils in water until they’re tender – maybe an hour or so and THEN add them to the other items. I made it following the directions exactly, and when I tasted it at the end, it was just so tangy, with such a strong sour and sweet taste. We’re so glad you enjoyed it, Laurel!

However, this was a tasty and exciting way to do lentils. I made a double batch with 1 hot pepper and somehow ended up much too spicy for me. Gluten-Free, Indian-Inspired, Thai-Inspired, Vegan, (minced // ~1.5 Tbsp as original recipe is written).
The lentils probably took at least 40 minutes and 2-3 more cups water. If you continue to use this site we will assume that you are happy with it. I love your cookbook and online recipes. We were both surprised by the taste, since we love Indian food, and each ingredient in the recipe. If you want to jazz up the rice for serving, fold in some chopped coriander just before serving, which adds color. But it tastes wonderful. All my fave recipes are minimalist baker recipes — in my fridge now: general tsao’s inspire tofu, this and banana bread!
So much flavor and super hearty and filling. Simmer over low to medium heat for 20-30 minutes until it’s thick and creamy and the lentils are tender. Looking forward to eating that tonight :). I ended up adding about 2 cups of veggie broth and cooking for a total of 45 minutes, which worked out great.
They should start to plump and soften, but not get mushy. I love searching for new recipes with them and getting them involved in their health. It adds a nice coolness to the warm and spicy curry.

We haven’t had an issue with adding salt when cooking lentils, but we are aware that some people recommend adding it later. But if in a hurry, adding a lid will help them cook a bit faster. Red lentils are an exception, they cook pretty fast. Sauté for 3-4 minutes, stirring occasionally. I added small amounts of water as things got very close to running out of liquids several times on the lowest setting on my gas stove and the pot lid on. We soak whole lentils almost overnight, and other dals for half hour before cooking. I love the flavors and ease of this recipe. Do you like cooking with turmeric? Reheat as needed stovetop or in the microwave. I had the same experience – added probably a cup of water over the longer than 20 minutes cooking time described.
Or, these ingredients are easily found at most supermarkets. Next time I will definitely double the recipe or just make the sauce and jar it.
