I always prebake the crust even if it's going to get another long bake with the filling, because I like the resulting color, flavor, and texture—and the fact that the bottom won't be soggy. One day I decided not to soak the raisins in whiskey but instead to soak prunes in Armagnac, and to use pecans instead of walnuts. Heatter gave me an appreciation for simplicity, and taught me the goodness of pound cakes, sponge cakes, and shortbreads—all the things that totally rely on good ingredients and being well-made. In the age of Cronuts and cotton-candy cake shakes, it's a relief to know there's still someone out there championing the thoroughbreds of the dessert world. This is a small book, but big on information. My in-laws put out this blackout cake from a bakery in Brooklyn called Ebinger’s, which was chocolate layers with a pudding filling, chocolate frosting, and cake crumbs all over. I don't, however, use many of the recipes. I'm too distracted and poor for all that.

The love that Dorie put into this book just seems out of the pages at me - I feel like I'm meeting these bakers myself, that I can smell the ovens and touch the brick walls of the buildings.
